Couscous is relatively low in calories, high in protein and fiber, packed with vitamins and is a great alternative if you're getting tired of always steaming up rice. Couscous has a long and rich history going back to ancient times. It's a staple food throughout Algeria, Tunisia, Mauritania, Morocco, and Libya. In the early 20th century, it began being used in European and American cuisine. In 2020, couscous was added to UNESCO's Intangible Cultural Heritage list. This dish combines colorful and vitamin-packed peppers, mushrooms and tomatoes with couscous to create a dish so gorgeous it's almost to pretty to eat... almost. We are grateful to personal trainer and chef Spencer Smalls for showing us a classic way to make this colorful and flavorful delight.
