Rated V for Vegan's Eunice Reyes makes you feel like you are in Mexico City as you watch her jump from one fabulous and authentically Mexican vegan hotspot to the next. The food looks astounding and much of it mimics traditional meat dishes, like the Al Pastor Taco! Al pastor, tacos al pastor, or tacos de trompo are generally preparated with spit-grilled slices of a pig, a recipe that originated in the Central Mexican region of Puebla and Mexico City. But, guess what, Eunice found a vegan version of the spit-grilled experience that looks and tastes identical... Wow! And, that's just for starters. Reyes has a knack for finding delicious, plant-based alternatives wherever she goes. This is the first in a series that will take you around the world, dining vegan.
